The variety of green and red lettuce, cultivated as baby leaf is part of the same botanical group of lettuce grown in bush. According to the variety leaves can be light green or dark red. The colour of the leaf is regulated by the presence of different photosynthetic pigments and is completely natural. The flavour of lettuce varies according to the colour of the leaf: it is fresh and delicate in green leafy varieties while tending to bitter in those with red leaf. The lettuce is used for the preparation of salads and as decoration for other dishes
